Ingredients
2 quarts pureed slightly green papaya
2 cups brown sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves
Method
To make the papaya puree: cut the papaya into small pieces and boil until tender. Drain off the water and crush the fruit or puree in a blender.
Blend all ingredients thoroughly. Heat on stove until sugar dissolves.
Comments
This is a good substitute for apple butter. It can be spread on bread like a jam or warmed and used as a topping for pancakes.

Should you add lemon juice to this recipe since papaya are not as acetic as other fruits?
