Friendship

For this edition of Peter’s Wife, I will draw from my own experience and what was sent in this week to help answer the questions I posed last week: What are some ways you maintain friendships back home when you are overseas for extended periods of time? With whom do you build friendships in your host culture? What do you do to maintain those friendships? How important is it to have friendships?

We all agreed that writing letters to keep in touch with friends back home is vital. Email has made it possible to communicate very quickly and makes it possible to be part of current events in our friend’s lives. “Snail mail” is unpredictable as to when it will arrive. Email can reach friends on their birthday, anniversary, or other important events. Have you learned to send e-cards? They are fun and free. There are several good sites that let you put together just the right card for the occasion.

Mashed Potato Casserole

Ingredients

3-4 kilos potatoes
8 ounces cream cheese-softened
8 ounces sour cream
1-2 teaspoons onion salt

Method

Mash the potatoes, however you usually make them (with milk, butter, etc. Try something exciting!

Mix the mashed potatoes with the cream cheese, sour cream and onion salt.

Blend until well mixed. Put in casserole dish. Drizzle with melted butter (and paprika if you have it…).

Bake at 350 degree F. for 1 hour.

This casserole is usually a little runny when you first take it out of the oven, but it sets up very nicely.

Brazilian Salad

Ingredients

2 large potatoes, diced in 1/2 inch pieces
2 carrots, diced in 1/4 inch pieces
1 cup cauliflower or broccoli flowerettes
1 stalk of celery, diced in 1/2 inch pieces
1 cup corn
2 green onions sliced
1/4 cup mayonnaise
1/8 teaspoon sesame oil

Method

Bring a pot of salted water to boiling.
Add potatoes and boil 2 minutes.
Add carrots and boil 2 more minutes.
Add cauliflower and boil 2 minutes or broccoli and boil 1 minute.
Add corn and and celery and boil 1 minute.
Drain and cool in ice water.

In a large bowl, mix all the boiled vegetables with the green onions, mayonnaise, sesame oil and salt and ground black pepper to taste.
Chill until ready to serve.

The unusual ingredient in this salad is the sesame oil. It lends a mild, but different flavor to this chopped salad. Use your imagination with adding other ingredients. This salad never has to be the same from week to week.

Mayonnaise

Ingredients

2 eggs
1 teaspoon salt
1/2 teaspoon pepper
3 Tablespoons vinegar
2 cups oil

Method

In a blender, mix eggs, salt, pepper, and vinegar.
Then SLOWLY drizzle oil into the blender while blending. Stop when the mayonnaise stiffens.

Store it in the refrigerator. It is not safe if it gets to room temperature.

Don’t let mayonnaise become a distant memory. You can make this delicious homemade mayonnaise.

Papaya Butter

Ingredients

2 quarts pureed slightly green papaya
2 cups brown sugar
2 teaspoons ground cinnamon
1/2 teaspoon ground cloves

Method

To make the papaya puree: cut the papaya into small pieces and boil until tender. Drain off the water and crush the fruit or puree in a blender.

Blend all ingredients thoroughly. Heat on stove until sugar dissolves.

This is a good substitute for apple butter. It can be spread on bread like a jam or warmed and used as a topping for pancakes.
