Brazilian Salad

Ingredients

2 large potatoes, diced in 1/2 inch pieces
2 carrots, diced in 1/4 inch pieces
1 cup cauliflower or broccoli flowerettes
1 stalk of celery, diced in 1/2 inch pieces
1 cup corn
2 green onions sliced
1/4 cup mayonnaise
1/8 teaspoon sesame oil

Method

Bring a pot of salted water to boiling.
Add potatoes and boil 2 minutes.
Add carrots and boil 2 more minutes.
Add cauliflower and boil 2 minutes or broccoli and boil 1 minute.
Add corn and and celery and boil 1 minute.
Drain and cool in ice water.

In a large bowl, mix all the boiled vegetables with the green onions, mayonnaise, sesame oil and salt and ground black pepper to taste.
Chill until ready to serve.

The unusual ingredient in this salad is the sesame oil. It lends a mild, but different flavor to this chopped salad. Use your imagination with adding other ingredients. This salad never has to be the same from week to week.
